Award-Winning Flat Creek Lodge Cheese Makes a New Kind of Treat
Swainsboro, Georgia (April 14, 2009) – It’s been quite a year for Flat Creek Lodge’s Aztec Cheddar cheese. Fresh from pulling in the Grand Award at the recent Flavor of Georgia food products contest, the spicy cheese with a hit of cocoa is now making its way into some out-of-the-ordinary cookies. Made with guajilo peppers and cocoa, the marbled cheddar harkens back to the spicy way chocolate was initially enjoyed by Mesoamericans. The Aztec Cheddar Cookies will knock your socks off!
* The dried guajilo peppers for the recipe can be found in many specialty food shops. These are the peppers that flavor traditional enchilada sauce.
Aztec Cheddar Cookies
1 ¼ sticks of butter
1 ½ c. shredded Aztec Cheddar
1 c. brown sugar
½ c. granulated sugar
½ t. salt
½ t. baking soda
2 ¼ c. all purpose flour
4 large dried guajilo chili peppers
1 ½ c. semi-sweet chocolate chips (at least 60 percent cocoa)
½ c. shredded Aztec Cheddar
Deseed and de-stem chilies and cover with warm water.
Cream butter, 1 ½ c. of cheese and sugars.
Add salt and baking soda.
Add flour until just mixed.
Remove chilies from water, julienne chilies into 1/8 to ¼ in. strips.
Stir in chilies, remaining 1/2 c. of cheese and chocolate chips.
Bake at 325 for 15 to 17 minutes.
